Soupe Alfabeto aux légumes

1 courgette

1 yellow + 1 orange carrot

1 long turnip

100g Alfabeto Panzani pasta

1 litre of chicken stock

2 sprigs of chervil

1. Peel the carrots and long turnip. Rinse the courgette. Cut the vegetables into strips 3 mms wide, using a knife or mandolin.

2. Using alphabet-shaped cookie cutters, cut letters out of the vegetable strips. Heat the chicken broth, add the Alfabeto pasta and the letter-shaped vegetables.

3. Let it cook for 4 minutes, tasting the broth to correct the seasoning.

4. Serve the soup with Alfabeto pasta and vegetables, sprinkle with sprigs of chervil and serve good & hot.

For a vegetarian dish, replace the chicken stock with vegetable stock.
